Probably NOT doable in a day, well 'maybe' if you have more than one driver and you only make pit/gas stops. And count a 'day' as 24 hours! I've driven/ridden pretty much all of it - trust me that I-95 will not be conducive to making good time. Some nice scenery on the route though..................
You're in Jersey? Cool! Be sure to stop at a supermarket/Costco, etc. to pickup some Pork Roll aka Taylor Ham, you won't be disappointed...I have been told by NC relatives it's like fried bologna on steroids!

Oh definitely more than one driver, pack the ice chest and hit the road running! It would be a long, hard ride...yes, there are 24 hours in a day.
Really not the best way to enjoy the view, I will give you that!
